Easy ENCHILADAS with CHIMICHECAS Salsa

Ingredients (for 2 servings)
- 200 g cooked, shredded chicken breast (or 150 g grated cheese for a vegetarian version)
- 4 flour tortillas (8-inch / medium size)
- 300 ml CHIMICHECAS salsa ROJA or VERDE (one jar)
- 100 g soft cheese (cream cheese)
- 50 g grated cheese (cheddar, mozzarella, or your favourite melting cheese)
Method

Prepare the sauce
- Pour the CHIMICHECAS Salsa into a pan.
- Add the cream cheese and heat over medium flame.
- Stir until the cream cheese is fully melted and the sauce is smooth.

Fill the tortillas
- Place a tortilla on a plate.
- Add shredded chicken or grated cheese in the middle.
- Roll it up tightly like a wrap.
- Repeat with the rest of the tortillas.

Assemble the enchiladas
- Place the rolled tortillas (seam side down) on a microwave-safe plate.
- Pour the hot salsa and cream cheese mixture generously over the top.
- Sprinkle with grated cheese.

Gratiné
- Heat in the microwave for 1 ½ minutes until the cheese melts and bubbles.
