My name is Angel, and I’m from Puebla, Mexico - one of the great culinary capitals of the World.
Some of my earliest memories are from my mother’s kitchen. I would sit with her and help her cook, surrounded by the aromas of herbs, chilles, and slow-simmering sauces. In Mexico, recipes, techniques and culinary secrets are passed down through the generations, and with time I learned that the key to good food is respect - for quality, for authenticity, and for the people we share our food with.
That key value stayed with me as I grew up. I spent ten years working as a chef in the United States, where I trained and developed my skills, explored new flavours, and learned how to balance tradition with creativity.
When I eventually married and moved to the UK, I felt a strong desire to share my native cuisine in a way that truly honours its roots, and to contribute something distinctive to the Great British food scene.
And that was where Chimichecas was born- a brand built on a single mission: to let people enjoy the brilliant smells, tastes, and sensations of Mexican cuisine- even from an ocean away.
